Jars from this bloom

From hive to jar

Four slow steps

Nothing is heated, blended or rushed. A jar takes as long as its flower does.

  1. Follow the bloom

Hives are carried to the flowers at night, a week before they open, so the bees wake up beside them.

  2. Let them forage

The bees work one bloom for two or three weeks. We open the boxes only to check that the colony is well.

  3. Wait for the caps

We take a frame only once the bees have sealed it with wax — that is how they tell us the honey is ready.

  4. Spin it cold

Frames are uncapped by hand, spun in a hand-cranked extractor, strained once through cloth and jarred the same week.

In every jar

Kept the slow way
