Red fruit, Jaggery, Roasted nut
Nothing is bought in as cocoa mass or powder. Every bar starts as a pod on a farm we have walked.
Beans and their white pulp rest under banana leaves in wooden boxes for six days, turned every second morning.
Spread on raised beds in the sun for about a week, until they rattle and smell of fruit and vinegar.
In small batches in a drum roaster, each origin to its own curve — lower for fruit, longer for depth.
Cracked, winnowed and stone-ground with sugar for three days, until it is smoother than the tongue can tell.
Cooled and warmed again on marble, so it sets with a gloss and breaks with a clean snap.
The workshop shop is open from Tuesday to Sunday, with a tasting at the long table on Saturday afternoons. Write to us about wedding favours, gift boxes for a team, or a bar we no longer make.
